paleo lemon cookies

no gluten, grain, nuts, eggs, soy, or refined sugars

  1. 2/3 c coconut flour- spooned and leveled
  2. 1/4 t sea salt
  3. 1/4 t baking soda
  4. 1/2 t baking powder
  5. 1/4 c raw honey
  6. 1/4 c coconut oil- liquid
  7. 1/2 c full fat coconut milk
  8. 1/2 t vanilla
  9. juice from one lemon
  10. 1/2 t lemon zest
for lemon
  1. Wash lemon well. Pat dry.
  2. Roll on counter to loosen juices.
  3. Collect zest from lemon first, then juices.
  4. Juice lemon over a sieve.
  1. Whisk together dry in separate bowl.
  2. Add wet ingredients into mixing bowl.
  3. Mix together on medium until well combined.
  4. Using a Tablespoon, spoon out dough and roll in hands to form ball.
  5. Slightly smash cookie in palm.
  6. Place on parchment paper covered baking sheet.
  7. Bake on 350 for 12-15 minutes.
  8. Cool for 10 minutes.
