forty days of yoga- day 28

today's class: 60 min of power vinyasa (hot)

a huge part of me loves 6am yoga- when i walk in it's dark... when i walk out -- sunshine. 

what i walked away with: a few days ago, i posted about my dear friend, renee. we have been close friends since kindergarten- and i don't ever remember ever being upset with her- there's not much room for drama when you only have 55 classmates! ...she has the kindest soul, is extremely laid-back, healthy, genuine, loving, and so incredibly selfless. yesterday, our hearts were broken when her amazing step dad, curt, passed away... God called him home and he is no longer suffering, but it was a sad day-- to say the least. this evening i am flying home to ohio to pay my respects and to be there for my amazing friend. throughout my entire life- and especially regarding wedding planning- she has been by my side; always offering to help and support me. she continues to say, 'janelle, i would do anything for you...' it makes me emotional every time- because i feel bad about all of the the time she is spending- just for me. so humbling. her love is unconditional- that is so clear to me- and for that, 
i am so grateful. 


the truth is: i feel the same way about her~
for i would do anything. 
renee- may you always remember the good times you have had with curt... we are all so blessed to have known him. i am especially grateful to have grown up with him- he made your mom so happy and was such a great person. may he rest in peace.

... although i won't be at yoga one over the next two days- i will be practicing yoga at my parent's house. *i will return to hot yoga on sunday 3.3.13 - for day 31- some things are just uncontrollable- however, i plan to continue my challenge! :)

today's class: 60 min of power vinyasa (very, very hot)

what i walked away with: today i held myself up- tonight my mat held me up. 

healthy peanut butter, banana, & honey milkshake

can you tell that i love peanut butter :) 

Prep Time: minutes
Yield: 1 serving
  • 1/2 cup (125 ml) milk, any kind you like (I used 1%, but you can use whatever you like)
  • 1 tablespoon peanut butter (I used creamy, but you can use crunchy if you like)
  • 1 tablespoon ground golden flaxseed (see note below)
  • 2 teaspoons honey (preferably raw, local honey)
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon organic raw, unfiltered apple cider vinegar
  • 1/4 teaspoon ground cinnamon
  • 1 pinch sea salt
  • 1 large banana, peeled, chopped into 6 pieces, and frozen
  • 1 teaspoon raw cacao nibs, for garnish (optional)
  1. Add all ingredients into a blender and process until smooth.
  2. Pour the smoothie into a glass and sprinkle the cacao nibs on top, if using.
  3. Serve immediately, while it is super thick and creamy.
Flaxseed Substitution: You can use 1 tablespoon rolled oats instead of the ground flaxseed, or if you have flaxseeds on hand but no ground flaxseed, you can grind it yourself in a coffee grinder or food processor.
Vegan Option: Use a non-dairy “milk” (like soy, almond, etc.) and use pure maple syrup instead of honey.

what i walked away with: i feel like there weren't very many good moods going on in charlotte today, including myself at times... however, nothing helps more than an intense workout and a healthy dinner...

pretzel truffle love

guinness-pretzel truffles

Yield: 16 truffles
Prep: 30 minutes
Total with chilling: 3 hrs 15 minutes


12 oz. bottle Guinness Extra Stout (divided)
8 oz. semisweet chocolate
1/2 cup softened unsalted butter, cut into pieces
3/4 cup finely pulverized pretzel rods
3/4 cup crushed pretzels for rolling truffles
  1. Place 1/4 cup plus 2 tbsp. Guinness Stout in a 2 cup saucepan.  Set aside.
  2. Pour the remaining Guinness Stout in a separate small saucepan and bring to a simmer.  Cook until reduced to 1 tablespoon, about 15- 20 minutes.  Be sure to keep an eye on this because, once reduced considerably, it can burn easily.
  3. Chop the chocolate into pieces and place in the saucepan with the Guinness Stout. Place the saucepan over medium- low heat and let stand until the chocolate starts to melt.  Stir with a wire whisk to blend together the chocolate pieces, but don’t whisk vigorously – we’re not trying to incorporate air.
  4. When the chocolate is melted and smooth, begin to add butter 1 tbsp.  at a time. Whisk gently until butter is melted, and then add the 1 tbsp. Guinness Stout reduction.  Stir in the pulverized pretzels.
  5. Pour the chocolate mixture into a bowl and chill in the refrigerator until firm (or overnight).
  6. Line a cookie sheet with wax paper. Scoop out ganache out by the heaping tablespoon and quickly roll between your palms.
  7. Once all the chocolate is used up, chill the truffles in an air-tight container in the fridge until ready to roll in crushed pretzels. These chocolates will keep for 7 days when stored properly in the refrigerator.  Roll truffles in crushed pretzels just before serving (so they’ll be crunchy!).

  • Pretzel rods can be finely pulverized in a food processor.  Avoid getting large pretzel pieces in the ganache, it will give the finished truffle a lumpy, undesirable texture.
  • If crushed pretzels resist sticking to the chilled truffles, roll the truffles between your palms to warm them up, and then roll in the pretzels. The pieces should stick.
  • If you're watching your salt content, unsalted pretzels may be used in the ganache mixture.
